erm... bookies have a margin in the middle of their odds called 'vigorish'. combining it with their moving odds to cover weight of money (as thurbs said) they guarantee their profits. they adjust the size of the vig according to their risk - if they're issuing large fixed value tickets and the odds shift, they increase their vig to cover off potential losses. that way they don't really care who wins, they've got enough people's money plus their vig to come out ahead.
